Something that we get to do for every retreat that we hold is taste the food that we serve. This is a part of the job that everyone loves! We want to make sure that we are serving high quality food that we know is going to look and taste good and that will match everyone’s requirements.
For the upcoming Wealth Manager retreat in October we recently went to a tasting. We took a trip over to The Grove in Hertfordshire to try the options that we wanted to serve to you at the event.
Catering at events can be a big problem sustainability wise. We can often over estimate the amount of food that is needed and food can come from big suppliers which means that it travels a long way. We are trying to work on this at all of our events. At the Grove most food is locally sourced and any leftovers from events are served in the staff canteen so this is a great hotel for us to use!
Another thing for us to consider is our water footprint, according to the Waterfootprint Network, 628,000 litres of water are saved by opting to serve chicken instead of beef for a 500-person dinner. We often serve chicken or fish for our plated lunches so this is a good first step for us!
Below are a couple of the things that we tried, however, we will keep you guessing on what is actually going to be served on the day!
The Menu
Umami Roast chicken presse with confit yolk puree, pickled onions, Jerusalem artichoke, pickled mustard seeds
Warm tempura stuffed baby courgette flower with feta, pea salad & shoots, edible petals & chervil dressing
Pea and shallot filled pasta, dressed with tomato vierge, Garden peas & shoots
Peach verbena Meringue
Caramelised baked English cream, served with seasonal fruits
